Blue teas are essentially between green tea (0% oxidized) and red (black) tea (100% oxidized). They fall from 10% to 70% oxidization, giving them a large range of flavors and processing methods. Oolongs are complicated and sophisticated teas, with a large spectrum of tastes, aftertastes and smells. Different oolongs are prepared to accentuate the natural character of the tea bush.
